Butternut Squash & Apple Soup

The trick is to roast your ingredients before popping them in your high powered blender. This Vitamix features a hot soup setting which is ideal for this recipe. It is naturally vegan and gluten free.

  • 1-3 Fresh Butternut Squash halved & hollowed
  • 1-3 Apple quartered & cored
  • 1/2-1 Yellow Onion peeled & quartered
  • 3-5 Peeled Garlic halved
  • Choice of Seasoning such as Mild Curry Powder to taste
  • Cashew Milk or alternative
  • Vegetable Broth
  • Filtered Water
  1. Preheat oven to 375 degrees
  2. Roast butternut squash, then after 20 minutes, add apples, onions & garlic for an additional 20 minutes or until squash is fork tender
  3. Add a bit of cashew milk to the blender
  4. Separate butternut squash from peel and place in blender
  5. Add apples, onions & garlic to blender
  6. Begin blending
  7. Use the plunger to incorporate ingredients adding liquid as needed
  8. Season to taste with Mild Curry Powder or desired flavor
  9. Continue to blend until flavor & consistency are achieved
  10. Serve immediately or reheat later
  11. Serve chilled if desired
  12. May be garnished with roasted nut or seeds
