The trick is to roast your ingredients before popping them in your high powered blender. This Vitamix features a hot soup setting which is ideal for this recipe. It is naturally vegan and gluten free.
- 1-3 Fresh Butternut Squash halved & hollowed
- 1-3 Apple quartered & cored
- 1/2-1 Yellow Onion peeled & quartered
- 3-5 Peeled Garlic halved
- Choice of Seasoning such as Mild Curry Powder to taste
- Cashew Milk or alternative
- Vegetable Broth
- Filtered Water
- Preheat oven to 375 degrees
- Roast butternut squash, then after 20 minutes, add apples, onions & garlic for an additional 20 minutes or until squash is fork tender
- Add a bit of cashew milk to the blender
- Separate butternut squash from peel and place in blender
- Add apples, onions & garlic to blender
- Begin blending
- Use the plunger to incorporate ingredients adding liquid as needed
- Season to taste with Mild Curry Powder or desired flavor
- Continue to blend until flavor & consistency are achieved
- Serve immediately or reheat later
- Serve chilled if desired
- May be garnished with roasted nut or seeds
